Ranchology Recipe Ingredients for Buffalo Chicken and Wraps
1 pound thinly sliced bacon
2 tablespoons bacon drippings
3 pounds skinless, boneless chicken breasts, cut into bite-size pieces
¼ cup buffalo wing sauce
2 tablespoons butter, melted
12 (10-inch) flour tortillas
1 cup chopped fresh tomatoes
¾ cup ranch dressing, divided
Ranchology Recipe Instructions for Buffalo Chicken and Wraps
Remove all but 2 tablespoons of the bacon, and cook the chicken breast pieces, stirring, until browned, about 10 minutes. Cover the skillet and let the chicken cook until the inside is no longer pink and the juices run clear, about 10 minutes more. Stir in buffalo sauce and melted butter until chicken is well coated. Stir in crumbled bacon. Keep the mixture warm
Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned and crisp, 10 to 15 minutes. Drain the bacon pieces on a paper towel-lined plate. Crush when cool
Heat tortillas, one at a time, in a large nonstick skillet over medium heat until air bubbles and small brown spots begin to form. Fill each warm tortilla with about 1/3 cup of chicken filling and a tablespoon or so of tomato. Drizzle tomatoes with 1 tablespoon ranch dressing. Wrap the tortilla around the filling.

Review
My husband and I love chicken wings so I knew this was going to be good! Plus it was quick and easy to put together - not to mention a little healthier than fried chicken wings! I reduced the number of servings and used some leftover grilled chicken that I tossed in some Frank's Red Hot, a little melted butter and a seasoning mix for our homemade hot wing sauce. I also used mayonnaise ranch dressing from this site vs bottled ranch dressing. I added some lettuce and shredded cheddar cheese along with the tomatoes. My family and I loved the addition of bacon to the wrap.
